- 2 cups diced tomatoes
- 1 cup diced bell pepper
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons red wine vinegar
- 4 cups vegetable broth
- Croutons (optional)
- Shaved cheese (optional)
Instructions
- In a blender or food processor, combine diced tomatoes, bell pepper, cucumber, red onion, olive oil, garlic, smoked paprika, salt, and black pepper. Blend until smooth.
- With the blender or food processor running, slowly pour in the vegetable broth and red wine vinegar. Continue blending until the soup is well combined and the desired consistency is reached.
- Taste and adjust the seasoning as needed. If desired, add croutons or shaved cheese on top of each serving.
