  • 1 1/2 cups almond flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 cups mixed berries

Instructions

  1. Preheat oven to 350°F (180°C). In a large bowl, combine almond flour, granulated sugar, and unsalted butter. Stir in eggs and vanilla. Add in heavy cream, whisking until combined in wet and dry mixtures. Fold in berries. Pour in a greased 8-inch round cake pan.
  2. Bake for 25-30 minutes.
  3. Let cool and top with whipped cream and a sprinkle of granulated sugar.
